The most important point to remember when cooking a NY strip is to ensure that the meat is not overcooked. Marbled steak cuts, like the NY strip, need some extra vigilance when cooking on the grill because their lean meat content can cause burns.
At least three hours prior to cooking, we remove NY Strip from fridge and place on a rack inside a roasting pan. About 30 minutes before we start our dinner service, we baste the NY strips in butter and place them on the line, ready to be grilled to perfection.
When a NY strip is ordered at Murphy’s we have a special technique that gets it to be cooked to the perfect temperature every time. When nearly done we remove the steak from the grill, and let it rest. Once rested and ready to be served, quickly pan sear the steak and baste it in butter and herbs so it is hot and sizzling when it gets to your table.
